Everyone needs a couple of reliable pumpkin pies for autumn entertaining. I’ll teach two of my surefire hits, which are entirely different from each other. The first is an especially good version of the classic spiced pie (mine has a soufflé-like filling), and the second is a creamy, refreshing, and light refrigerator pie.
